This page lists corrections to the cookbook. The most important corrections have (Important correction) after the recipe name.

Changes Between First Printing (11-20-2019) and Second Printing (03-08-2020)

Endive Fennel Salad with Apples and Blue Cheese
1 tablespoon honey changed to 1 tablespoon honey (or maple syrup)

Ultimate Rolled Biscuit
Add new (last) ingredient: 2 tablespoons melted butter for brushing

Salted Chocolate Chunk Shortbread Cookies

Add RecipeNotes: For smaller cookies, divide dough into 3 equal portions and roll each portion into 9-inch logs, 1½ inches in diameter.  Cut each log into 18 (1/2-inch) rounds.  Bake about 15 minutes.

Gnocchi Alla Piemontese
Add: Serves 4-6

Ultimate Rolled Biscuits
Step 3: after …small pieces, add (I like to grate the butter)

Braised Savoy Cabbage

Fonduta Alla Valdostana
Step 3: replace this instruction with In microwave, heat the half and half to simmering.

Sbrisolona
In the ingredients, replace Pinch of salt with 1/2 teaspoon salt.

Falling Chocolate Cakes
Step 2: add the following to the last sentence ,but I prefer using ramekins which result in more even cooking.

Carrot Cake
In the ingredients for the Cream Cheese Frosting: (1) add room temperature to the first two ingredients, and (2) change the third ingredient to 3 cups confectioners’ sugar.
Add to RecipeNotes: If the frosting is too soft, you can add more confectioners’ sugar or 1 to 2 tablespoons cornstarch.  Using cornstarch will adjust the consistency without adding more sweetness.  Start with 1 tablespoon.  You do not want to add too much.

Cinnamon Rolls
Step 5 (in The Filling/Assembly): replace this instruction with Cut off ends to even up. Cut remaining log into 16 pieces (about 1½ inches thick) and place in two 9×13-inch parchment paper lined pans.
Step 6 (in The Filling/Assembly): change cook time to 15-18 minutes.
Add to RecipeNotes: Unbaked rolls can be frozen.  Thaw the frozen rolls in the refrigerator overnight.  Let rise for 2 hours before baking as per baking instructions.

Quick and Easy Caesar Salad Dressing
In the ingredients (before ground black pepper): add a new ingredient 1/8 to 1/4 teaspoon salt.

Corn Tortillas
After Makes 12 (6-inch) Tortillas add or 8 (7-inch) Tortillas.
In the ingredients: change 1 teaspoon shortening to 2 tablespoons vegetable or olive oil.
In the ingredients: change 1 1/3 cups warm water to 1 to 1¼ cups hot water.
Step 1: Keep the first sentence, but replace the remaining with Add the oil and stir together with a fork or your fingers.  Slowly add 1 cup of water, stirring the dough with a spatula or your hands.  Continue to add water, 1 tablespoon at a time until the dough comes together in a cohesive ball.  The dough’s texture should feel springy and firm, similar to Play-Doh.  If the dough is too wet and is sticking to your hands, add in a little more masa.  If it is too dry, add a little more hot water.  The amount of water needed will depend on the brand of masa you use.  The most important thing is the consistency of the dough.
Step 3: Replace this instruction with Cut into 8 or 12 slices.  Form each slice into a ball and roll out into
6-inch or 7-inch rounds.

Cavatelli
Add a new last ingredient: Semolina flour for sheet pans.
Insert a new Step 4: Line one or two sheet pans with parchment paper and sprinkle lightly with semolina flour.
Step 5 (formerly step 4): Add to the end of this instruction Place the cavatelli on the parchment lined pans in one layer.  Lightly sprinkle the cavatelli with semolina flour.

Panettone (Important correction)
In the ingredients: change 1½ sticks (6 ounces) unsalted butter, melted and cooled slightly to
6 tablespoons (3 ounces) unsalted butter, melted and cooled slightly.

Crispy Fried Fish Fillets
Add the following as the first sentence in the GetCheffy: Add some grated lemon zest and a tablespoon or two of cornmeal to the breadcrumbs for added crunch and flavor.

Polpette – Meatballs
In the ingredients, after ¼ – ½ cup water, add (use lesser amount of water for firmer textured meatballs)

Braised Calabrian Pork Ribs
In the ingredients, change 3 cups or more chicken stock to 3 cups or more chicken or beef stock
Also, add the following as a RecipeNote:
To marinate the ribs overnight before cooking, combine olive oil, minced garlic, jalapeno pepper, and fresh herbs. Rub mixture over ribs, place in a zip lock bag and marinate overnight. Before searing the ribs (step 4 above), scrape off the marinade and reserve. Proceed with steps 3, 4, and 5 above. Add leeks and fennel and sauté 5 minutes. Add reserved marinade and vinegar and simmer together 3-5 minutes. Continue with step 8 above.

Gnocco Fritto
Change the first ingredient (flour) to 2¼ cups Tipo“00” flour or 2 1⁄8 cups AP flour
Add at the end of step 5: A Silpat™ mat is perfect for this.
Add the following to RecipeNotes (as a footnote to step 3): If you mix by hand you do not have to knead, but be sure there are no dry flour pockets.
Add as a GetCheffy: If you only want to cook part of the Gnocco, you can keep the remaining dough refrigerated for up to one more day.

Changes Between Third Printing (08-03-2020) and First Published Printing (11-07-2020)

Pumpkin Pancakes
Change milk ingredient from 1 cup milk to 1 to 1¼ cups milk

Savory Shortbread Crackers

Panettone
Several changes were made to this recipe to make the raising process more reliable. The complete updated recipe can be found here. A summary of the changes follows:
Ingredients: Increased from 2 cups to 2¼ cups flour and added a new ingredient ¼ cup milk.
Instructions (Steps 2 and 3): Added more detail to these steps and made slight modifications: (a) you no longer add the fruit and pine nuts until after the first raise, and (b) the time to beat the dough in the mixer is reduced to 5 minutes.
Instructions (Other): The first raise is now a timed raise of 2 hours. The fruit and pine nuts are incorporated in the dough just before the second raise. The oven temperature is no longer decreased 25° after the first 10 minutes (but you may need to cover the Panettone with foil if the top is getting too brown).

Various Recipes
In instructions using the mixer, changed the term “paddle attachment” to “flat beater” (the actual KitchenAid term) for the following 6 recipes: Panettone, Brioche, Cassata, Lemon Ricotta Cake, Salted Chocolate Chunk Shortbread Cookies and Cannoli Cheesecake.

Honey Nut Granola
Changed this recipe from Honey Nut Granola to Maple Nut Granola. The new recipe is here.
Changed the honey ingredient to ½ cup maple syrup.

Grown Up Birthday Cake

Cassata

Black Bean Chili and Chicken Sausage

Pasta All’Amatriciana/Arrabbiata
In the ingredients (before basil leaves), added ½ cup red wine.

Lasagne with Meat Sauce and Besciamella
Due to the size of the lasagne sheets, we decided that the instructions for an 8 x 8-inch baking dish should be changed to instructions for a 9 x 9-inch baking dish.
Change 8 x 8 to 9 x 9 in three places: (1) just under the recipe name, (2) in step 6 of “Let’s Get Started”, and (3) in the instructions title “For Each 8 x 8-inch Pan”.
In the instructions section that will now read “For Each 9 x 9-inch Pan”: (1) in steps 1 and 4, change 3/4 cup of meat sauce to 1 cup of meat sauce, and (2) in steps 2 and 4, change 1/3 cup of besciamella to a scant 1/2 cup of besciamella.
In the instructions section that reads “For Each 9 x 13-inch Pan”: (1) in step 3, change 4 lasagne sheets to 3 lasagne sheets, and (2) in step 5, change (16 sheets) to (12 sheets).
In the Recipe Notes, add a new last sentence: If your pan is deep enough (at least 3 inches), you can add another layer of lasagne.

Sweet and Spicy Pecans
In the first ingredient, added after raw pecan halves: (hazelnuts or walnuts also good)
Step 2 (added a new last sentence): Remove from pan and set aside.
Steps 3 and 4 (combined steps 3 and 4 into a new step 3): Melt the butter in the skillet. Add the spice mixture and stir to combine.
Steps 5 and 6 (combined steps 5 and 6 into a new step 4): Mix the sugar and water and add to the skillet. Cook about 2-3 minutes, stirring until the sugar begins to thicken and caramelize.
Added a new step 5: Add the nuts to the skillet, stirring until the nuts are well coated.
Old step 7 (new step 6), changed the last sentence to: Allow to cool completely before storing in airtight container.

Changes between the Fifth Private Printing (01-29-2022) and the Sixth Private Printing (04-20-2023)

Crab Cakes
In the ingredients, added after cayenne pepper: 1 teaspoon Old Bay Seasoning (optional)

Savory Shortbread Crackers
Under the recipe name, changed the “Makes About” to: 30 Crackers
In the third ingredient, deleted: 3 ounces crumbled blue cheese, or
Step 5 (added a new second sentence): Dock (poke with a fork) each cracker.

Italian Braised Rabbit in White Wine

Ginger Molasses Crinkles
Recipe Name: changed to Ginger Molasses Cookies (these are softer than a typical crinkle)
In the baking soda ingredient: changed from 1 teaspoon to 1½ teaspoons
In the molasses ingredient, changed the quantity and added a comment:
¼ cup mild flavored molasses, like Grandma’s or Brer Rabbit
In the last ingredient, changed to: Sanding sugar (for rolling dough balls in)
Step 7 (replaced everything after the first sentence with): Roll in sanding sugar. Place 2 inches apart on baking sheets. Flatten to 2 inches. I like to use the bottom of a ¼ cup measuring cup for this. Sprinkle flattened cookies with more sugar.
Step 8 (changed the bake time to): 7 minutes (also, added a new last sentence): The cookies may look underdone, but residual heat will finish baking them.

Carrot Cake
Replaced the recipe in the cookbook with the recipe here.

Sbrisolona
Changed the last ingredient to: 2 teaspoons grated orange zest (removed “or lemon”)
Step 6: changed the word “citrus” to “orange”

Pumpkin Pie Filling
Added a “Get Cheffy” section at the end, with:

Other options to modify the classic filling:
Option 1: Leave as is but add 1 teaspoon of vanilla to the filling
Option 2: Add vanilla and change spicing (1½ teaspoons cinnamon, 1 teaspoon ginger, ½ teaspoon allspice, ¼ teaspoon nutmeg)

Take your pie to the next level by caramelizing the pumpkin.  This results in a deeply concentrated pumpkin flavor.  Place pumpkin in a medium saucepan over medium heat. Cook, stirring frequently, until somewhat dry and slightly caramelized (it will start to leave a film on the bottom edges of the pot), about 10 minutes.

Pumpkin Spice Cake
Added 1 teaspoon vanilla to the ingredients. Under cake instruction #4, included the vanilla in the second sentence.

Savory Shortbread Crackers
Added Makes About 30 Crackers under the recipe name. Changed the third listed ingredient to ½ cup grated Parmigiano cheese. Added to the Recipe Notes: Instead of Parmigiano cheese, you can use 3 ounces of crumbled blue cheese, or a mix of both cheeses.

Sweet and Spicy Pecans
In instruction #6, inserted before the second sentence: Roast in a 325° convection oven until crisp and toasted.

Quiche
Added to the end of Custard Filling instruction #3: If you are baking in a tart pan with a removeable bottom, place the pan on a sheet of parchment paper or a sheet pan to catch any butter leaking from the pan.

Panettone
Changed the amount of the fourth ingredient to: 1 teaspoon anise seed. Changed instruction #3 to: With flat beater attached, add cooled butter/milk mixture and eggs to dry ingredients in mixer bowl.  Mix together for one minute.  Scrape bowl; add anise extract, vanilla, and Marsala.  Mix on medium speed for 5 minutes, scraping bowl as needed

Stuffed Mushrooms
Changed the time in instruction #4 to: 15 minutes. Changed the time in instruction #5 to: 5 minutes.

Falling Chocolate Cakes
Changed the name to Chocolate Soufflé Cakes. Changed from “Makes 8 ramekins” to Makes 6 ramekins. Changed the second instruction from “butter 8 ramekins” to butter 6 ramekins. Changed the sixth instruction from “Bake about 13-15 minutes” to Bake about 12-13 minutes, and from “gooey” to soufflé-like.

Foolproof Pie Crust
Changed the shortening/butter ingredients to the (formerly optional) ½ cup cold shortening and ½ cup cold butter. Changed the first instruction to include and butter.

Caramel Sauce
Changed the first instruction from “medium saucepan” to small saucepan.

Fonduta Cheese Sauce
This recipe makes quite a lot, so we decided to cut it down to about 2/3 and make other small adjustments. Reduced the following ingredients to: 2 tablespoons butter, 2 tablespoons all-purpose flour, 2 cups half and half, 1 egg yolk, 1 cup grated Fontina cheese. Added the following ingredient: 1⁄3 cup grated Parmigiano-Reggiano cheese. Combined instructions 1 and 2. Changed former instruction 2 (now 1) to a cook time of 2 minutes instead of 5. Changed former instruction 3 (now 2) to half and half instead of milk and to a cook time of 5 minutes instead of 15.

Red Beans and Rice
In the ingredients: changed from 2 teaspoons to 1 teaspoon Pimentón, added (optional) after cayenne pepper, and added ½ teaspoon salt after cayenne pepper. Added salt to instruction 2.

Pasta Alla Carbonara
In instruction 5, added a new last sentence: Remove from heat. Replaced instruction 6 with the following: While whisking constantly, slowly drizzle ¼ cup of the hot pasta water into the beaten egg mixture until well blended.  Slowly drizzle the tempered egg mixture into the pasta, tossing until well incorporated and saucy.  Season with salt and pepper.  Drizzle in more pasta water if a thinner consistency is desired.
