Shishito peppers, olive oil, salt – that’s it folks! Yes, you can do other fancy things with this wrinkly, thin skinned Japanese pepper, but why would you? Toss them in a little olive oil, sprinkle with kosher salt and grill over high heat in a grill pan until they blister, turning them frequently. Serve them stems and all as finger food. A perfect appetizer and so simple. This is a mild pepper, but one in ten can pack a bit of heat. The peppers are readily available from most grocery stores including QFC, Trader Joe’s, Whole Foods and Safeway.
