Simply Delicious Veggies!

Finding good, fresh vegetables in the winter can be a challenge.  Broccoli, cauliflower, and brussels sprouts are typical winter vegetables but they don’t appeal to everyone, including my husband!  Carrots, cabbage, and green beans are usually a reasonable choice although green beans can also be hit and miss.  Of course, these recipes will be extra delicious made with seasonal carrots and green beans from the home garden or the Farmer’s Market! 

With Simply Delicious Veggies you can use different vegetables with each of the recipes or jazz them up with some tasty toppings.  Shaved Parmigiano or Gremolata, a quintessential Italian condiment are yummy choices.  Gremolata is simply finely chopped parsley, garlic, and lemon zest.  I like to add some toasted pine nuts as well.  Something crispy is always additive and Crispy Onions are perfect – buy them in a can or jar and sprinkle them on before serving.  They are also delicious as a garnish on baked potatoes, salads and other vegetables.  You can usually find them in the produce department of the grocery store.  Simply adding lemon zest and fresh herbs before serving adds brightness and flavor to most vegetables.
